  1. Prepare the Buttercream: Separate your buttercream evenly into three bowls and tint each bowl to create a gradient of blue from dark to light.

  2. Pipe the Icing: Fill your piping bag with the darkest blue and start from the bottom, piping a ring of icing on the bottom third of the cake. It’s okay if it’s a little jagged or crooked, as it will be blended and smoothed later. Once you complete a full ring of icing, empty as much of the remaining icing in the bag back out into the bowl.

  3. Repeat with Remaining Colours: Repeat with the middle blue and lastly with the lightest blue, ensuring you coat the top of the cake as well.

  4. Blend the Colours: Use the tip of your offset spatula to create horizontal bands of zigzags in the icing. This will help blend the icing colours and give a smooth look rather than distinct rows.

  5. Smooth the Icing: Hold an offset spatula parallel to the cake, and with a gentle touch, glide it across the surface to create an even layer. After each pass, wipe off the excess icing from the scraper into a spare plate or bowl. If you have a rotating cake stand, gently turn the cake as you smooth the frosting for a more consistent finish.

  6. Make the Seashells: Melt the candy melts. Rub the silicone mould with cotton wool and pour the candy melts in. Allow them to set.

  7. Decorate the Cake: Place the seashells and edible flowers onto the cake. Let your creativity guide you, placing them along the sides or on top of the cake to create a realistic sea-inspired design.

  8. Add Edible Sand: Sprinkle edible sand around the base and the top of the cake for an authentic beach feel.

  9. Finishing Touches: Finish it off with a number, "Happy Birthday," or a Moana-themed cake topper.
